Family Favorites Friday: Rueben Panini
We took a family cruise several years ago in February. When I felt some motion sickness, a reuben sandwich from the grill was the only thing that sounded good. After we returned home, I started making these in my grill pan with the press. You could use a panini press, too.
I apologize for the small photos of the photo steps. Hopefully you can see enough.
For each sandwich, layer the following ingredients in the order given:
1 slice rye bread
thousand island salad dressing, about 2 tsps
2 Tbsp sauerkraut
1 slice of swiss cheese
4 slices turkey pastrami (a traditional reuben is made with corned beef, but this works)
1 slice swiss cheese
2 Tbsp sauerkraut
1 tsp mustard
1 slice rye bread
Butter the outside of the sandwich. Place in pre-heated grill pan and top with press (or use panini press). Cook each side 4 -5 minutes. Eat hot.
You can adjust the ratio of ingredients to suit your personal preference.
This is a favorite of some of my boys.
Sometimes I make rye bread in my bread machine; sometimes I buy rye bread.

DO you remember The Tiffin Shop on Sunset? They had a wonderful cream cheese and asparagus on rye that was amazing and I've been recreating it for years. We also love a good Reuben or anything with sauerkraut.
I do remember the Tiffin Shop, but never had the cream cheese and asparagus on rye. Are you willing to share your recipe? Sounds yummy.
Absolutely - I've been making it from memory for years, but I do have it written down somewhere. Once found, I'll post it with pics!
