Family Favorites Friday: Best Peach Cobbler

fresh peach cobbler and never fail pie crust



A scrumptious peach cobbler 
with 3 layers of flaky crust and 
lots of peaches. If you love the 
crust as much as the peaches, 
like my family does, you will love 
this cobbler. So delicious! 



   

Best Peach Cobbler


Ingredients

8    cups   fresh  peaches, peeled and sliced
2    tablespoons    flour
2/3    cup    brown sugar, packed
1/2    teaspoon    ground nutmeg
1/2    teaspoon    cinnamon
1/2    teaspoon    vanilla extract

  

Directions 

Pre- heat oven to 475 degrees.

Mix peaches, sugar, flour, and spices in a bowl; set aside.

 Make Pie Crust.  Even if you have never made a pie crust, you can be successful with this recipe.

Never Fail Pie Crust

3    cups    flour
1/2    teaspoon    salt
1 1/4    cups    shortening
1    egg ( beaten )
5    tablespoon    water ( ice water )
1    teaspoon    vinegar 

 For crust, mix together flour and salt; cut in shortening with pastry blender. In separate bowl, mix egg, water, and vinegar; add to flour mixture and stir with a fork until dough forms a ball. 

Divide dough into 3 portions. Roll one portion out between waxed paper (tip: for a tender crust, roll from the center of the dough out, not back and forth). Cut dough into a 9" square, place in 9" square baking dish. Poke  all over with fork and bake for 8-9 minutes.

While dough is baking, microwave peaches for 3 minutes, stir well; microwave 3 more minutes. Stir in vanilla.

Roll out a second 9" square dough, poke all over with fork.

Take baked crust out of oven, pour 1/2 of peach mixture on top of crust, top with second crust.

 Bake 12 more minutes, remove from oven, add lattice top crust which you have prepared while cobbler is baking.

Lattice top crust: for the last crust, roll out a 9" x 10" piece of dough, cut into 1" x 9" strips. Lay on top of cobbler in woven pattern. Bake 15-18 more minutes or until crust is browned. Serve with ice cream.
