Family Favorites Friday: Blackberry Crumb Pie

Best Blackberry Pie

My blackberry bush is loaded with berries; some red, most green.

But soon, it will be loaded with ripe berries and we will tackle the job of picking berries from amongst the thorns.

If my blackberry bush is anything like the 'hedges' that grew around Sleeping Beauty's castle, then Prince Charming was a very tenacious man!  That thing is covered with thorns!

We love fresh berries, blackberry cobbler, and...

Blackberry Crumb Pie!

This pie is yummy!  You can substitute blueberries for the blackberries, if desired.

BLACKBERRY CRUMB PIE

1 cup sugar
1 cup sour cream (or plain Greek yogurt)
3 TBSP flour
1/8 tsp salt
4 cups fresh blackberries
1 unbaked 9-inch pie shell
1 TBSP  sugar
1/4 cup fine dry breadcrumbs (I usually use whole wheat bread to make my crumbs)
1 TBSP sugar
1 TBSP melted butter

Combine first 4 ingredients; stir well.

Place blackberries in unbaked pastry shell; sprinkle 1 tablespoon sugar over berries.
Spread sour cream mixture over berries.

Combine breadcrumbs, 1 tablespoon sugar, and butter; sprinkle over top.

Bake at 375 degrees for 45-50 minutes or until center of pie is firm.

Cool and serve.  Refrigerate leftovers.

What do you like to do with fresh blackberries?
